Irene Eckroth, 78, passed away Dec. 8, 2010, at her home in Mandan, surrounded by her loving family. Mass of Christian burial will be held at 10 a.m. Saturday, Dec. 11, at St. Joseph Catholic Church, Mandan, with the Rev. Patrick Schumacher as celebrant. Burial will be at Mandan Union Cemetery.
Visitation will be held from 1 to 9 p.m. today at Weigel Funeral Home, Mandan, where a a parish rosary/vigil will be held at 7 p.m. Visitation will continue one hour before the service at the church on Saturday.
Irene was born March 27, 1932, to Joseph G. and Regina (Lauinger) Leingang in Morton County, where she was also raised and educated. She married Dan Eckroth on Oct. 24, 1950, in St. Anthony. Irene and Dan had just celebrated their 60th wedding anniversary this year. With a passion for cooking, Irene dedicated 29 years of her life working at Gourmet House as a gourmet cook and also four years at Peacock Alley. Her family was her life and she loved cooking for them, always in the kitchen preparing for that holiday meal starting early in the morning at 6 a.m. Over the years, Irene whipped up several secret recipes.
Always lively and energetic, Irene loved to socialize, which included Hardees coffee groups. She was an active member of St. Joseph Church since 1956. She and Dan enjoyed traveling whether to the west coast, Arizona, Florida or Hawaii. Irene will be remembered for her sense of hospitality, especially family gatherings, which was a highlight for her through the years.
Irene's kind and gentle spirit will be deeply missed by her beloved husband of 60 years, Dan; daughters, Virginia (David) Austin, Mandan, and Lydia (Larry) Friesz, Bismarck; sons, Rick (Kathy) Eckroth, and Ronald (Annette) Eckroth, both of Mandan, and Daniel, Jr. (Jean) Eckroth, Farmington, Minn.; sisters, Rose (Don) Sturn, Darlene (Hilbert) Hohbein and Bernadette (Mike) Schaff, all of Mandan; sisters-in-law, Dorothy, Beehler and Julie Leingang, both of Mandan, and Bernice Leingang, Mesa, Ariz.; grandchildren, Jared (Brandy) Eckroth, Carrie (Ken) Michlitsch, Tonya Eckroth (Nathaniel Bishop), Jesse (Trisha) Eckroth, Jeremy (Kimberly) Eckroth, Jamison (Kristin) Eckroth, Scott (Amy) Austin, Steven (Katherine) Austin, Adrian Austin, Jason (Dione) Friesz, Joshua (Stephanie) Friesz and Dana Eckroth; and great-grandchildren, Samantha Irene, Landyn, Hanna, Zachary, Alexis, Ashton, Gus, Abbygayle, McKenzie, Colton, Caden, Alyssa, Ashley Irene, Aubrey, Victoria, Brenna, Dylan, Haley, Jazmyn, Nevin, Mitchell and Benjamin.
Irene was preceded in death by her parents; brothers, Bernard, Leonard and Larry; great-grandchild, Nathan Daniel Eckroth; and godmother, Stephanie Knoll.
