  [S927] Obituary. Carol Simontacchi November 15, 2011 Carol Simontacchi went to be with the Lord on November 15, 2011. She was a wonderful mother to four daughters, and a Nanna to two granddaughters and two grandsons. She was the owner of Island Nutrition Center on Sanibel, and contributed greatly to her community with her love of nutrition and her dedication to serving the Lord. She also served in her church, Safe Harbor Community Church, playing the piano, singing, and helping with the children. She is greatly missed, but is at peace in her body, no longer experiencing the suffering of the disease that took her, and she is at peace in her spirit, enjoying her home with the Lord, in a body that cannot die. A memorial service will be held at 2 PM on Sunday, December 4, 2011 at Safe Harbor Community Church, 12960 Plantation Rd., Ft.
